Little River was born from a simple idea: to create a place that feels part of the everyday rhythm of Surry Hills.
Following the incredible response to 40Res, Josh and Keliann Raine began imagining what could come next. Then, in December 2025, they welcomed their son, River, and the idea became something much more personal.
Becoming parents shifted the way they thought about neighbourhoods, community and the small rituals that shape a day, picking up beautiful bread on a morning walk, grabbing a coffee after school drop-off, collecting something for dinner on the way home, or simply stopping for a moment.
A Little History…
When a neighbouring tenancy became available on Reservoir Street, what was originally considered as a private dining space for 40Res evolved into something Josh and Keliann had talked about for years: a neighbourhood bakery and provisions store grounded in craftsmanship, seasonality, exceptional produce and genuine hospitality.
And so, Little River was born.
A Little History. A Lot of Connection.
At the heart of little River are bakers Hannah and Joe Gray, whose story with Josh began years earlier at Tetsuya’s.
Joe had built his career in fine dining, including time as Junior Sous Chef at the two Michelin-starred Midsummer House in Cambridge, while Hannah trained as a specialist sourdough baker at The School of Artisan Food in Nottinghamshire before developing her craft in traditional artisan bakeries.
A Little Sugar…
The pair met in Cambridge before travelling to Australia, where both eventually joined Josh at Tetsuya’s. Joe continued his journey through some of Sydney’s most respected kitchens, while Hannah transitioned from artisan bread into pastry under Josh’s guidance.
After returning to the UK, Hannah and Joe went on to establish Little Sugar in 2021. What began as a small neighbourhood bakery grew into an award-winning business, earning a loyal following for handcrafted sourdough, pastries and an uncompromising approach to quality.
Bringing Josh, Hannah and Joe back together in Sydney felt less like starting again and more like continuing a story.
Made Here, Every Day
Little River is the daytime extension of the 40Res philosophy.
Beautiful ingredients. Careful cooking. Thoughtful hospitality. Everything made with purpose.
Every loaf, pastry, sandwich and savoury bake is made fresh on site by the Little River and 40Res teams, with a menu that moves naturally with the seasons.
Expect handcrafted sourdough, Pepe Saya butter pastries, generous sandwiches, pies and sausage rolls alongside a growing collection of 40Res pantry favourites to take home.
There are plenty of little signatures along the way too.
Australian wattleseed is becoming a house speciality across both Little River and 40Res, its roasted, nutty and gently coffee-like character finding its way into breads, pastries, desserts and dishes across the two venues. A distinctly Australian ingredient that reflects the way we like to cook: familiar, thoughtful and just a little unexpected.
From a Petersham jamon baguette sliced to order, to our 40Res 48-hour slow-cooked wagyu steak bake wrapped in Pepe Saya butter puff pastry, the food is designed to feel comforting and recognisable while still carrying the detail you would expect from the 40Res kitchen.
Coffee comes from Toby’s Estate, bread comes out of the oven every morning, and the shelves are filled with provisions worth taking home.
Two Neighbours, One Philosophy
The connection between Little River and 40Res goes beyond sharing a street.
A Proper G’Day…
Guests dining at 40Res can add bread and pastries from the Little River menu to their evening order, ready to take home at the end of dinner.
A fresh loaf. A pain au chocolat. A cinnamon queenie.
Because tomorrow morning deserves good bread, too.
Named after Josh and Keliann’s son, little River represents a new chapter for the 40Res family, one rooted in family, community, craft and the simple pleasure of making really good things for the neighbourhood.
